Please bear with me, as this is my first Mouthwatering Monday entry.

A couple of years ago, I signed up to a wonderful online community of parents, where one woman, Kater, posted this recipe. I decided to give it a try, figuring that my kids and husband like chicken. Oh, my!! The moment I bit into a piece of this juicy, flavorful chicken, I could almost hear all the Southern women in my family rise up from their graves and shout, “Yes! This is what we’re talkin’ about!”

Since I don’t like to heat up my kitchen in the summer time, I mostly make this recipe in the winter. Since the temperature dropped suddenly (as in, today it didn’t even reach zero!), I decided to dust off the recipe and made it for my family. I doubled the recipe and there isn’t a bit of it left! Even my picky 3 year old decided that this was worthy of eating!

Here we go.

Kater’s Golden Oven Fried Chicken

1/2 C unsalted butter, melted and divided
1 tsp minced garlic (you can also use a smaller amount of Garlic Powder)
1 C dry bread crumbs
1/4 C grated Parmesan
2 Tbsp parsley
1/2 – 3/4 tsp garlic salt (to your taste)
1/4 tsp thyme
dash pepper
4-5 boneless skinless chicken breasts **or** 1 lb of chicken tenders

1 – Heat oven to 400 degrees. Melt half of the butter in a 9×13 glass pan (to coat the bottom for “frying”). Melt remaining butter with garlic in a bowl for dipping.

2 – Combine bread crumbs, Parmesan, and spices in a flat or wide bowl. Dip chicken into melted garlic butter, coat with crumbs and place in glass baking dish. Drizzle any remaining butter on top of the breaded chicken and sprinkle with any remaining crumbs. DO NOT re-use crumbs later.

3 – Bake for 45 min to an hour (depending on the thickness of the breasts,) or 15-25 minutes for sliced chicken “fingers”.

4 – pick the fried bits out of the edges of the pan after dinner when nobody is looking.

I would have taken pictures of the chicken, but my kids descended upon the chicken as soon as I put it on the table. 20 minutes later and there weren’t even crumbs left!
